½ stick butter
½ cup vegetable oil
1 ¾ cup sugar
1 tsp vanilla
½ cup milk
2 ½ cups flour 1 tsp baking soda
½ tsp baking powder
½ tsp gr. cinnamon
½ tsp gr. cloves
2 cups fresh shredded zucchini
(you may also use frozen but squeeze out extra water)
1 cup pecan nuts or 4 tbsp cocoa, ½ cup chocolate chips
Cream butter and oil, add sugar, eggs & vanilla. Add sifted flour mixture, milk, zucchini and nuts. If you do the chocolate version, add cocoa to flour mixture first. Add chocolate chips last.
Place in 2 greased loaf-pans and bake in pre-heated oven at 350° for 60 minutes. Let sit in pan for about 10 minutes. Dust with powdered sugar or prepare frosting with powdered sugar and enough hot water to make a thick sauce.
