Our New Mexico grown sun-dried red chile pods are hand-cleaned with stems and most of the seed removed for quick and easy preparation. This one pound package is equivalent to almost two pounds of chile that is has stems, blemishes, and seeds left on. You lose approximately half the weight of the chile through the chile cleaning process. We recommend that you place the entire bag of chile in the freezer, to keep fresh, until you are ready to make the delicious red chile sauce. This package will yield approximately 5.5 pints of red "gold" chile sauce depending on its consistency.
Please place the chile pods, that are packaged in a plastic bag, directly into your freezer as soon as you receive it if you don’t plan on making it right away. If not, please take it out of the plastic bag and place in netted bag or brown bag so that chile can breathe. This will ensure the chile’s freshness and keep it from getting moldy.

For a couple of years running I've shipped Sichler's red pods to an old friend from the South Valley, now living about an hour south of Minneapolis where winters dive way below zero. My friend appreciates this special taste of home not just for the unforgettable flavor and aroma that says family, but for the real heat it brings inside and out as it's prepared and consumed among friends where such meals are considered an exotic surprise. Sichler's chile has also traveled to Sydney Australia, where my daughter's enchiladas have become a rare and unique treat for her "down under" compadres. Knowing how much Sichler's is appreciated across the country and halfway around the world makes me feel lucky that this fine product is available locally, from a family with roots right here and that friendly New Mexico attitude to boot. My family has been buying chili from Sichlers for as long as I can remember. I now live in New York and still order my chili from them. It is well worth the shipping costs as you can always count on it being the best chili money can buy.

I was fortunate to be in Socorro on Labor Day weekend and bought a sack of "big jim" chiles at your San Antonio store. I've never seen chile that looked that good! I gave about half of it to friends and stuffed the rest in my luggage. Diced some, saved some for rellenos, but pureed most of it. Wonderful!!
I could hardly wait for the dried red big jims to be ready. Got some this week. Pureed and seasoned it. Got almost 3 gallons of puree from 2 lb. of stemmed pods. Even more wonderful!!!

This is my second time ordering from Sichler's. This time I ordered the dried chili along with the chili pods. The flavor is amazing and by far it's the best dried chili I have made....I've never been disappointed with the chili I have had shipped to me by Sichler's...It is always consistent in flavor and I love the fact that they cleaned and seeded the pods, it saves me so much time. ....good job sichler's!

My Grandma also bought from Sichlers for her red chili, she is in heaven now and our family tradition will stay the same because we love Sichlers. We also buy the green chili, have not found better tasting chili!!

I grew up in New Mexico and moved away. I have ordered the red "Grown in New Mexico Chile" from other sources before. They usually ship it and it comes broken up and the red chile is almost black looking and the taste is terrible. A friend in New Mexico gave me Sichlers name. The chile was amazing. The chile was beautiful red in color. It was packaged without seeds and stems which saves me tons of time. The chile flavor was excellent!!!!! What a find this is for me to have access to the best chile around!!!!

The best flavor I've had. We made chili beans the next day and they were great. My husband said the flavor was better then the Pueblo chili we always buy. The pods were very clean and were delivered in a couple of days.
